Your experience begins with a warm welcome at a tranquil riad, offering a peaceful setting in the heart of the bustling city. This wonderful location will serve as your kitchen and classroom for the day, where you’ll explore the techniques, stories, and traditions behind some of Morocco’s most iconic dishes.

Before any cooking begins, you’ll venture out into the vibrant maze of Marrakech’s souks and markets and, surrounded by fragrant spices, colourful produce, and rows of traditional ingredients, you can shop amongst the locals, like a true Moroccan. Guided by your host or local chef, you’ll learn how to select the right vegetables, cuts of meat, and the most aromatic herbs and spices essential for authentic Moroccan cuisine. Whether your lesson centres around preparing a tagine (a slow-cooked stew made with meat, vegetables, and spices), a tangia (a uniquely Marrakech dish cooked in clay pots), or a sweet Moroccan dessert, each dish will give you some insight into the deep cultural roots of Moroccan food.

Back at the riad, you can roll up your sleeves and take part in the cooking process. As you chop, simmer, and season, your instructor will share insights into Morocco’s food history, such as the influences of Berber, Arab, Andalusian, and French cuisines that have shaped modern Moroccan cooking. You’ll also learn traditional techniques, including the use of preserved lemons, saffron, and ras el hanout — a complex blend of local spices that varies from region to region.

Once your dish is complete, enjoy a leisurely meal in the lovely surroundings of the riad, savouring the flavours and textures you’ve helped create. After lunch, there’s an optional return visit to the market, where you can browse and purchase authentic Moroccan herbs and spices, perfect for recreating your culinary experience at home.

Day 1 Marrakech

You’ll depart at 9.00am from Marrakech and head to a quiet riad where you’ll get ready for your lesson.

Next, you’ll head off into Marrakech’s maze of markets and souks to find the perfect ingredients for your dish. You might be preparing tagine, tangia or even a dessert – its up to you!

When you have eaten and cooked your meal, you can head back over to market to look for authentic herbs and spices for your own Moroccan dishes.
